For every batch of dough, we refresh our sourdough starter 3 times, strictly by hand, night and day, 365 days a year.
For our naturally leavened baked products we only use our own sourdough starter.
Using “an alternative” to this starter, one of the widely available specialised raising agents for example, would definitely make our lives easier, but it would also mean betraying our tradition and the values we believe in.
